Ever feel like there’s just not enough hours in a day? I know that feeling! Then comes meal time.
Often being time poor, most of us (including myself) tend to stray away from a home cooked meal and more towards a store bought meal as they’re so convenient and deceivingly economical. But when you add up the costs and all the dollars resulting in exercise to burn off the extra calories then it’s not so economical.
If you’ve got a convection oven, you’ve got a meal!
Yes that’s right, a convection oven. If you don’t have one, go buy one – they are the best kitchen appliance you will ever invest in (besides the milkshake mixer). Now to the quick meal – this meal seriously can be made in under 30 minutes. Yes, that’s right 30 minutes! Tasty, quick, healthy and simple.
- Bulgogi beef marinade (don’t worry it contains no meat products)
- 500g of Chicken Breast
- 10mL of Olive Oil
- 2 Cloves of Fresh Garlic (optional)
- Mixed Leaves
- Some form of dressing
Time: 25 minutes (cooking & prep)
Trim all the fatty white bits of your chicken and pat dry with a paper towel. If you like, you can dice up your chicken now however cutting it before serving usually keeps all the juices in.
Mince up your garlic and add to a mixing bowl with the olive oil. Combine the chicken and mix through. As your mixing everything up add about 3 tablespoons of the Bulgogi sauce or enough to evenly coat the chicken. Also great to marinate extra and pop it into the freezer for next time!
Drop your chicken into the convection oven, and crank it to 180 degrees for 20 minutes in a roasting tray OR dish
Whilst the chicken is cooking, time to prepare your salad. Wash, drain, chop your required ingredients. Other vegetables are encouraged, such as mushrooms but I didn’t have any so my salad looks a little bland. Remember to keep an eye on that succulent chicken, if it is browning a touch too quick lower the temperature – so easy!
Remove chicken from the convection oven and let it rest for a few minutes whilst you breathe in the aromas. Once it has cooked down a little, slice chicken into bite sized chucks.
Combine, then drizzle a light layer of your favourite dressing on top of the chicken and salad, if you like some extra flavour drizzle some of the pan juices on top as well.
