If you’re short on time to create a tasty healthy meal (like myself), here’s a super quick recipe that will excite your taste buds without the lengthy prep work required!
Don’t get stuck with eating the same old grilled or roast chicken without any seasoning day after day. Try coating your chicken pieces in this simple but tasty Tex Mex seasoning! Once cooked, chicken can be served in a salad or with steam vegetables. Make sure to make enough so you’re able to pack some to work or dinner the following night!
Ingredients:
- Tex Mex Seasoning (Aldi Supermarket)
- 1kg of Chicken Thigh Fillet
- 10mL of Olive Oil
- Mixed Vegetables of your choice
Time: 25 minutes (cooking & prep)

Step 1:
Trim all the fatty white bits off your chicken and pat dry with a paper towel. If you like, you can dice up your chicken now however cutting it before serving usually keeps all the juices in.
Step 2:
Combine the chicken with olive oil and add enough Tex Mex seasoning to cover the chicken thoroughly (you could let this sit overnight to marinate but if you’re in a hurry then just skip this).
Step 3:
Place chicken on the wire rack taking care not to overlap the chicken as this will cook unevenly. Set the convection to 180 degrees for 20 minutes and fire it up!
Step 4:
Whilst the chicken is cooking, time to prepare your vegetables. Wash, & chop your required ingredients and steam as required. If you’re extremely time poor, most supermarkets have pre washed & pre chopped vegetables you can cook in the microwave.
Step 5:
Remove chicken and let it rest for a few minutes before you chop
Step 6:
Chow it down or pack some lunch!
